One of our favorite summertime food traditions is peanut butter chicken. This recipe reminds me of our camping trip in Wyoming with my in-laws. My husband’s family is from the small town of Afton, Wyoming. The country is beautiful up there. We spent several days camping in Grover Park then moved to Greys River. For the week that we were there, we were surrounded by endless trails to ride ATVs on that led to more beautiful views than I could count. Good thing we took a few pictures.
As previously mentioned, each family in our group of campers prepared a different meal each day. My mother-in-law made the Dutch oven lasagna. My husband and I made this peanut butter chicken. This recipe isn’t too bad for camping because you can prepare the sauce at home before your trip. While you’re camping, simply grill the chicken and top with the sauce. Easy peasy.
We also like to grill this meal up on a weeknight because it’s pretty simple, and the kids love the peanut buttery flavor. The sauce has a bit of an Asian twist, so I love to serve this chicken with some stir-fried or grilled veggies and rice. This peanut butter sauce is so delicious because it has the texture of the creamy peanut butter, the saltiness of soy sauce, and a slight kick of crushed red pepper.
Peanut Butter Chicken
4 chicken breast halves, grilled
½ cup creamy peanut butter
¼ cup soy sauce
3 TBSP lemon juice
¾ tsp ground ginger
½ cup water
1 tsp minced garlic
2 TBSP brown sugar
½ tsp crushed red pepper
Heat up the last eight ingredients on the stove over medium-low heat until well blended. Top the grilled chicken with the sauce. Serve with your favorite side dishes.
